This bread is very moist and delicious. Pretty simple to make and the kids love it!
Ingredients
- • 2 medium shredded zucchinis
- • 2 1/2 cups of all purpose flour
- • 3 tsp baking powder
- • 1 tsp baking soda
- • 1 tsp salt
- • 3 tsp of cinnamon
- • ¾ cup of sugar
- • ¾ cup of applesauce
- • 1 teaspoon vanilla
- • ½ cup of canola oil
- • Substitute 2 ½ cups of Gluten Free All purpose flour (tested with Bobs Red Mill Gluten free Flour) + 2 tsp Xanthan Gum for 2 ½ cups of all purpose flour

Instructions
- Preheat oven to 350 degrees.
- Grease a standard loaf pan.
- Shred the zucchinis.
- In a medium bowl add all of the dry ingredients, flour, sugar, baking powder, cinnamon, baking soda, baking powder, and salt.
- Once mixed add the rest of the ingredients, zucchini, vanilla, applesauce, and oil.
- Mix just until moist.
- Pour into the loaf pans and bake for 40 to 45 minutes.

I made this on two occasions. The first time I made it according to the recipe, the second time I used Red Delicious apples and cut down the sugar to 1/2 cup. Heavenly on both times!
We aren’t into sweet foods, so cutting down the sugar didn’t affect the taste of the bread. We also liked it as it was according to the recipe.

Thank you, thank you for this recipe!!!! Finally something the whole family can have in spite of their different food allergies. For a cheaper gluten free flour mix, we used 1 cup brown rice flour to 3/4 cup tapioca flour until it totaled 2 and 1/2 cups. We did not need to use xanthan gum. We also added enjoy life chocolate chips! Thank you! We would love your thoughts on banana and pumpkin bread versions, too!
Glad to hear. My husband keeps asking me to put chocolate chips in the bread and I never tried it. I will have to try it next time!
