This is a sweet and moist corn muffin. Very simple to make and kid friendly. A perfect side to a Mexican meal or a great muffin for a breakfast treat.

Ingredients

  • * 1 1/2 cup all purpose flour (for Gluten Free option see below)
  • * 3/4 cup sugar
  • * 1 cup cornmeal
  • * 1 tbsp baking powder
  • * 1 tsp baking soda
  • * 1/2 tsp salt
  • * 1 can cream corn
  • * 1/2 cup applesauce
  • * 1 cup Dairy Free Milk
  • * 1 tbsp vinegar
  • Gluten Free Option
  • * Substitute 1 1/2 cup all purpose Gluten Free flour + 1 tsp Xanthan gum for 1 1/2 cup all purpose flour

Instructions

  1. Preheat oven to 400 degrees
  2. Grease 18 muffin cups
  3. In a medium bowl combine flour, sugar, cornmeal, baking powder, baking soda, & salt
  4. Add cream corn, applesauce, dairy free milk, and vinegar
  5. Mix until combined
  6. Pour into greased muffin cups
  7. Bake at 400 for 15 minutes
