<p class="summary italic">It&#8217;s BBQ time.  Here&#8217;s a perfect refreshing summer drink.  It&#8217;s a twist on the traditional Mojito.  Usually they are made with club soda and a lot of sugar.  I&#8217;ve taken the sugar down to two tablespoons.  Added watermelon and came up with a Mojito that is great with or without the alcohol.  Made in five minutes it&#8217;s great when entertaining people.</p>

<li id="zlrecipe-instruction-0" class="instruction" itemprop="recipeInstructions">Add mint leaves and watermelon to a pitcher and press with a muddler or wooden spoon until the watermelon is dissolved

</li>
<li id="zlrecipe-instruction-2" class="instruction" itemprop="recipeInstructions">If adding sugar, place sugar and water in a pot a stir over medium heat until sugar is dissolved.

<p class="summary italic">I had been hearing a lot of people freezing bananas and sticking them into the food processor to substitute as ice cream.  But when I tried it the flavor was too intense since the bananas are very ripe and it wasn&#8217;t creamy enough.  My kids wouldn&#8217;t touch it.  So with my kids next to me, we decided to add dairy free milk and of course allergy free chocolate chips.  The kids literally went bananas for it.  There is no added sugar.  Three easy ingredients and no cooking.  My kid&#8217;s love pulsing the food processor and making their own ice cream.</p>

</li>

</li>
<li id="zlrecipe-ingredient-2" class="ingredient" itemprop="ingredients">* 1/4 cup of allergy free mini-chocolate chips *optional</li>

<li id="zlrecipe-instruction-0" class="instruction" itemprop="recipeInstructions">Freeze 3 ripe bananas with the skin off in a freezer safe bag
</li>
<li id="zlrecipe-instruction-1" class="instruction" itemprop="recipeInstructions">Place frozen bananas in a food processor and blend until the consistency of ice cream

<li id="zlrecipe-instruction-2" class="instruction" itemprop="recipeInstructions">Add 1/2 cup dairy free milk and blend until combined. It will now have a soft serve consistency.

</li>
<li id="zlrecipe-instruction-4" class="instruction" itemprop="recipeInstructions">Place in a freezer safe container and refreeze to the consistency of your liking.  (I put it back in for 2 hours)

<p class="summary italic">Risotto used to be one of my favorite dishes to order at Restaurants.  Most of the time it&#8217;s loaded with cheese, cream and butter.  This Allergy Free version uses vegetable broth to make the rice creamy and with great seasoned mushrooms and asparagus it&#8217;s not lacking for flavor.  It&#8217;s a bit of work, but when you want restaurant quality food at home look no further!</p>

</li>
<li id="zlrecipe-ingredient-1" class="ingredient" itemprop="ingredients">1 cup of chopped asparagus
</li>
<li id="zlrecipe-ingredient-2" class="ingredient" itemprop="ingredients">1 tbsp fresh parsley or 1 tsp dried parsley
</li>
<li id="zlrecipe-ingredient-3" class="ingredient" itemprop="ingredients">2 garlic cloves split
</li>
<li id="zlrecipe-ingredient-4" class="ingredient" itemprop="ingredients">1 onion split
</li>
<li id="zlrecipe-ingredient-5" class="ingredient" itemprop="ingredients">1/4 cup olive oil split
</li>
<li id="zlrecipe-ingredient-6" class="ingredient" itemprop="ingredients">1 1/2 cups Aborio rice
</li>

</li>

<li id="zlrecipe-instruction-0" class="instruction" itemprop="recipeInstructions">Saute mushrooms, asparagus, onion, garlic, &#038; parsley in 2 tbsp olive oil until veggies have softened.
</li>
<li id="zlrecipe-instruction-1" class="instruction" itemprop="recipeInstructions">Put veggies aside.
</li>
<li id="zlrecipe-instruction-2" class="instruction" itemprop="recipeInstructions">In a large pot at 2 tbsp olive oil, 1 garlic clove, 1/2 chopped onion &#038; Aborio rice and cook over medium high heat until rice is opaque. (about 3 minutes)
</li>
<li id="zlrecipe-instruction-3" class="instruction" itemprop="recipeInstructions">Add 1/4 cup white wine to the rice and cook, stirring occasionally until absorbed
</li>
<li id="zlrecipe-instruction-4" class="instruction" itemprop="recipeInstructions">Add 1 cup of broth, bring to boil over medium high heat then lower to medium heat.  Stir occasionally, until absorbed.
</li>
<li id="zlrecipe-instruction-5" class="instruction" itemprop="recipeInstructions">Continue to add broth 1 cup at a time stirring until broth is absorbed
</li>
<li id="zlrecipe-instruction-6" class="instruction" itemprop="recipeInstructions">Rice is done when softened but slightly firm
</li>

Shortbread cookies are a much drier cookie.  They are great with dairy free milk, tea, or coffee.  My daughter kept hounding me to make lemon cookies and I found that shortbread was the best way to go.  These are great to make ahead of time and freeze the dough.  If your dough is frozen  take out a day before using and let defrost in the refrigerator.

</li>
<li id="zlrecipe-instruction-1" class="instruction" itemprop="recipeInstructions">Cream margarine, coconut oil, sugar, vanilla and salt.

<li id="zlrecipe-instruction-2" class="instruction" itemprop="recipeInstructions">Add flour,lemon zest and lemon juice.
</li>
<li id="zlrecipe-instruction-3" class="instruction" itemprop="recipeInstructions">Mix until combined.  Batter might be crumbly, pour batter onto wax paper and knead into a ball.
</li>
<li id="zlrecipe-instruction-4" class="instruction" itemprop="recipeInstructions">form the dough into a long cookie log.  I like to wrap the dough in the wax paper and form it into a log by squeezing and rolling.

<li id="zlrecipe-instruction-5" class="instruction" itemprop="recipeInstructions">Once in a log cut circles of dough and place on a cookie sheet
</li>
<li id="zlrecipe-instruction-6" class="instruction" itemprop="recipeInstructions">Bake for 8 to 10 minutes.  Let stand for 1 minute and remove to cooling rack.

<p class="summary italic">So all the ice places are opening up around the neighborhood and with  the allergies in the family its difficult to go due to cross contamination.  So I tried out my own cream ice recipe.  It was super simple, 3 ingredients and no cooking!! I felt like I was having ice mixed with ice cream.  Perfect summer treat.  Definitely going to try some other flavors!  If you don&#8217;t want to scoop it out pour it into ice pop holders.</p>

<li id="zlrecipe-ingredient-3" class="ingredient" itemprop="ingredients">(optional 1/4 cup coconut flakes)</li>

<li id="zlrecipe-instruction-0" class="instruction" itemprop="recipeInstructions">Over meduim heat melt sugar in the water to create a simple syrup

<li id="zlrecipe-instruction-1" class="instruction" itemprop="recipeInstructions">Once melted, pour into blender and add coconut milk
</li>
<li id="zlrecipe-instruction-2" class="instruction" itemprop="recipeInstructions">Blend for about thirty seconds, until well blended and there&#8217;s a little foam on top

<li id="zlrecipe-instruction-3" class="instruction" itemprop="recipeInstructions">Pour into a container and seal ( I used my freezer tupperware)
</li>
<li id="zlrecipe-instruction-4" class="instruction" itemprop="recipeInstructions">Place in the freezer

<p class="summary italic">Spring is almost here and on those rainy days sometimes I just want something comforting.  This  soup is pretty fast to make.  The most time consuming thing is forming the meatballs.  The meatballs cook right in the broth.  It&#8217;s a simple soup that looks pretty fancy.  My kids even ate it,  (without the escarole) I just added star pasta to theirs.  I made this quickly in the morning and reheated right before dinner.

<p class="summary italic">This is a great activity to do with children.  There is virtually no cooking.  I&#8217;m talking 1 minute to melt the coconut oil and raw honey.  Using raw cacao and fresh fruit fillers or nut butter fillers this is a much healthier option for a chocolate treat than you find in stores.  And the kids are so excited to see how they can make their own chocolate! </p>

</li>

</li>
<li id="zlrecipe-ingredient-4" class="ingredient" itemprop="ingredients">     1/2 cup coconut oil
</li>
<li id="zlrecipe-ingredient-5" class="ingredient" itemprop="ingredients">      3 tbsp raw honey (amount can vary depending on your liking to sweetness)

<li id="zlrecipe-instruction-0" class="instruction" itemprop="recipeInstructions">Melt coconut oil and raw honey under low to medium heat.  This should not take longer than 1 minute.
</li>

</li>
<li id="zlrecipe-instruction-2" class="instruction" itemprop="recipeInstructions">Add Cacao, vanilla, &#038; cinnamon to the oil and honey.

<li id="zlrecipe-instruction-3" class="instruction" itemprop="recipeInstructions">Mix until smooth.
</li>
<li id="zlrecipe-instruction-4" class="instruction" itemprop="recipeInstructions">Pour mixture into 12 mini muffin cups only half way.
</li>
<li id="zlrecipe-instruction-5" class="instruction" itemprop="recipeInstructions">Add 1 tsp of desired filler into each cup
</li>
<li id="zlrecipe-instruction-6" class="instruction" itemprop="recipeInstructions">Cover with the remaining mixture.
</li>
<li id="zlrecipe-instruction-7" class="instruction" itemprop="recipeInstructions">Place in freezer for about 30 minutes or until hard.  You know it&#8217;s ready when the chocolate pops out when a pairing Knife is inserted in the side.

A friend of mine has a daughter with food allergies who really wanted crumb cake.  So I went for it and boy am I glad I did!  It is now my favorite cake. </li>

</li>

</li>

<li id="zlrecipe-instruction-0" class="instruction" itemprop="recipeInstructions">Split and wash the leeks well.  Use only the white and light green parts
</li>
<li id="zlrecipe-instruction-1" class="instruction" itemprop="recipeInstructions">In a large saucepan, combine leeks, chopped carrots, chopped onion, chopped celery. Saute until the onions are glossy.

<li id="zlrecipe-instruction-2" class="instruction" itemprop="recipeInstructions">Add potatoes, and broth
</li>
<li id="zlrecipe-instruction-3" class="instruction" itemprop="recipeInstructions">Bring to a boil
</li>
<li id="zlrecipe-instruction-4" class="instruction" itemprop="recipeInstructions">Lower heat, cover and simmer for 1 hour
</li>
<li id="zlrecipe-instruction-5" class="instruction" itemprop="recipeInstructions">Transfer to a blender and puree.
</li>
<li id="zlrecipe-instruction-6" class="instruction" itemprop="recipeInstructions">Reheat soup for 3 minutes.  Salt and pepper to taste</li>
